Cooking_Turkish Stuffed Bell Pepper and Zucchini, & Rolled Sesame leaves (Dolma & Salma)

Summer is a good season to enjoy fresh veggies. This month, we got fresh bell peppers and zucchinis from Kalona and fresh sesame leaves from our garden. These are perfect ingredient for cooking healthy and hearty dishes, Salma & Dolma. Let's make them!

What you need:
  • Two bell peppers
  • Two middle size zucchinis
  • 15 sesame leaves (or collard greens, grape leaves, or cabbage)
  • 1 cup of rice
  • 1 tomato
  • 1 onion
  • 2 cloves of garlic
  • 1 Tablespoon of thyme
  • Black pepper
  • Salt
  • Red pepper flakes
  • Paprika powder


How to make:
1. Wash veggies. Cut zucchini into three equal parts and remove inside. But don't make a tunnel! It should look like zucchini cups.

2. Minced onion and tomato. And mixed all other ingredients. You can adjust the amount of salt and black pepper based on your preference.

3. Stuff veggies using prepared rice-stuffing.

4. Place them in the pot and add water enough to cover the bottom half of veggies. Cover the pot with lids and cook until water boils.

5. Once water is boiling, decrease the heat to the medium low and cook for additional 30 minutes. At this time, slightly open the lid so that the steam goes out.

6. Let them cool and serve with yogurt.

Usually, in this activity, the teacher puts emoticons on the screen and asks the students to choose them, but in my class, I had the students draw them directly to add a more creative element.   My name guides me to be a creative educator, researcher, and traveler. Ye means 'art' and Jun means 'high.' So I introduce the meaning of my name as 'an artist going on a high note.'
